Apple Danish Cheesecake

Cheesecake filling prepared from cream cheese, sugar, cream of tartar, and eggs. Filling is poured over crust. Filling topped with mixture of apples coated in brown sugar, flour and cinnamon. Almonds are sprinkled over apples and cheesecake is baked until crust edges are golden brown. Cheesecake is refrigerated overnight before serving.

Ingredients -
1 cup All-Purpose Flour
1/2 cup Ground Almonds
1/4 cup Sugar
1/2 cup cold Butter
1/4 teaspoon Almond Extract

Filling:
8 ounces Cream Cheese, softened
1/4 cup Sugar
1/4 teaspoon Cream of Tartar
1 Egg

Topping:
1/3 cup packed Brown Sugar
1 tablespoon All-Purpose Flour
1 teaspoon Cinnamon
4 cups thinly sliced peeled Tart Apples
1/3 cup slivered Almonds
 
Preparation:

1. Combine flour, almonds and sugar, cut in butter until crumbly. Add extract.

2. Shape dough into a ball and place between two sheets of waxed paper. Roll out into a 10 inch circle.

3. Transfer to a greased 9 inch springform pan, gently press dough against the bottom and up the sides of pan. Refrigerate for 30 minutes.

4. Preheat the oven to 350 F.

5. In a mixing bowl, beat cream cheese, sugar and cream of tartar until smooth. Add eggs, beat on low just until combined. Pour over crust.

6. Combine brown sugar, flour and cinnamon. Add apples and stir until coated. Spoon over the filling. Sprinkle with almonds.

7. Bake in preheated oven for 40 to 45 minutes or until golden brown.

8. Cool on a wire rack for 10 minutes. Carefully run a knife around edge of pan to loosen.

9. Cool 1 hour longer. Refrigerate overnight. Remove sides of pan.

Soft Cream Cheese

All ingredients should be at room temperature before you begin mixing. Place ingredients on the countertop for about a half an hour and that should do the trick nicely.
