Apple Cinnamon Cheesecake with Walnuts and Apple Cinnamon Glaze

Crunchy cheesecake crust created from unsalted butter, light brown sugar, all-purpose flour, quick cooking oats, walnuts and cinnamon. The mixture is pressed onto the bottom and sides of a springform pan. Cheesecake filling prepared from cream cheese, sweetened condensed milk, eggs, frozen apple juice concentrate. Filling is spooned over crust and topped with apple slices that have been cooked down slightly in butter. Cheesecake is garnished with cinnamon apple glaze.

Ingredients -
1/2 cup Unsalted Butter, softened
1/4 cup firmly packed Light Brown Sugar
1 cup All-Purpose Flour
1/4 cup Quick Cooking Oats
1/4 cup Walnuts, finely chopped
1/2 teaspoon Ground Cinnamon
2 (8 ounces each) packages Cream Cheese, softened
1 (14 ounces) can Sweetened Condensed Milk
3 Large Eggs
1/2 cup Frozen Apple Juice Concentrate, thawed
2 medium Apples, cored and sliced

Cinnamon Apple Glaze:
1 tablespoon Butter
1/4 cup Apple Juice Concentrate, thawed
1 teaspoon Cornstarch
1/4 teaspoon Ground Cinnamon
 
Preparation:

1. Preheat the oven to 300 degrees F.

2. Beat 1/2 cup butter and sugar in a small bowl until fluffy.

3. Add the flour, oats, walnuts and cinnamon and mix well.

4. Press the mixture firmly on the bottom and halfway up the side of a 9-inch spring-form pan.

5. Bake for 10 minutes.

6. In a large bowl beat the cream cheese until fluffy.

7. Gradually beat in the sweetened condensed milk until smooth.

8. Add the eggs and apple juice concentrate and mix well.

9. Pour into a prepared pan.

10. Bake for 45 minutes or until the center springs back when lightly touched.

11. Cool.

12. Cook the apples in the remaining 1 tablespoon of butter until they are tender-crisp in a large skillet.

13. Arrange the apples on top of the cheesecake.

14. Drizzle with the cinnamon apple glaze.

15. Chill.

16. Store leftovers covered in refrigerator.

Apple Cinnamon Glaze:

1. In a small saucepan, combine the apple juice concentrate, cornstarch and ground cinnamon.

2. Mix well.

3. Over low heat, cook and stir until thickened.

Bring all ingredients to room temperature before you begin cheesecake preparation. Soften cream cheese in the microwave if desired. Microwave an 8 ounce bar of cream cheese for 15 seconds on high heat.
